Imagine standing in front of the tallest mountain in the world. Gazing up towards that invisible peak above the clouds. Think about the preparation, the dedication, the support team, and mental strength required to face the behemoth that is, Mount Everest. As Asia’s highest peak, it’s the central jewel in the Seven Summits challenge crown. Often the one that got away, the one people dream of, tell stories of - forever.
‘Better than the Ever-rest’ borrows some of Nepal’s favourite flavours - plum, tea and warming spice - reimagining them to create a cocktail worth the time, worth making right, worth sharing.
Ingredients
1. To a short bar glass filled with ice add gin, spiced plum syrup, and apple juice.
2. Give this a stir before topping the glass with soda water and a slice of apple.
*For the spiced plum syrup:
- Combine 250grams fresh dark plums (or use canned), 75grams sugar of your choice, 100mls of brewed black tea, one cinnamon stick, 1tsp of vanilla then simmer in a pan till the plums break down.
- Strain through a fine sieve and cool before using.
- As an optional extra, add in a little dried red chilli for a kick.
