Inspiration
Serene white sand beaches, crystal-clear seas and dense forests don’t exactly sound like the backdrop for an epic, world-class mountaineering experience… Head inland, away from the beaches of New Guinea island, however to find Oceania’s highest mountain - Puncak Jaya. Boasting rocky, treacherous slopes, the technical skills required to summit are immense, and with heavy rainfall almost guaranteed, this peak contains hidden depths.
Closely related to the Indonesian rambutan, lychees provide a floral, tropical sweetness making the ‘Why not try a Pancake Jaya’ a holiday in a glass. Best served on the beach, after an adventure, of course.
Ingredients
1. To a highball glass filled with ice
2. Add the grenadine so it sits at the bottom of the ice
3. Carefully pour in the gin and lychee syrup, topping with soda water
4. Garnish with two lychee’s on a cocktail stick, and serve with a straw to mix.
